You can go through and see every teams default playbook in the playbook editor. I like running the flexbone as my base so I went through the teams that have the flexbone in their playbook (Army, Navt, Georgia Tech) until I found the one that I liked the most. As far as seeing other custom playbooks there isn't a way in game as far as I know. Although there are several threads on here where people are talking about their custom playbooks.
