Sure. This is a technical issue. The more detail the crowd gets, the less memory and such is left for what really matters... on the field. The detail actually took a step back after NCAA 07 to get the game to run at 60 frames a second. It would be easy to get them better looking.... and then very difficult to get the game running smoothly. The player models would become less detailed, the field would be come less detailed, etc.
We certainly are always looking for ways to make them better without a huge hit to the console's resources. One thing we did add this year was crowd logic, so they aren't going crazy on every play. They actually watch the game now and react properly.
The game is final. Though a patch isn't out of the question. Keep posting what is wrong, especially after you get the game. We will be using a lot of your feedback to figure out what goes in a patch if we do one.
