Old Rookie needs some help

Please, don't make fun of me, but I haven't played a football video game consistently since Bill Walsh's College Football. My wife bought me the Wii version so I could play with my 7 year old son. I like the game and don't mind it's short comings.

My question, I started a dynasty with Alabama and just beat Clemson 12-7. I'm playing on the junior level with my sliders all set at 75. Is that the best setting for someone like me who doesn't play much, but wants to occasionally play my dysnasty?

Another quick question, why does my QB not throw the ball to the receiver I want him to? I turned off the help for pass, but it still doesn't always throw to the receiver I want it to.
