I have simulated and played dozens of games with various settings.
Hands down the best is the following:
Accept all default settings 50 for Human/CPU

Change only interceptions to 0.
Leave all else intact.
Penalties - set all to 95 or 100.
Leave all other settings as they are.
Play 7 or 8 minute quarters - i play 7 because of Defensive TDs.

It may simple but take the following into consideration.
From a player rating - slider adjustment standpoint, EA has put a lot of time into this.

It is a lot of hard work dedicated to the actual rating of a player - and how that player performs in a simulated/computed game.

The overall design is great - updates released from EA that better simulate what this experience should be.
That being said - no custom slider customization is taken into affect, when the EA updates are released. These are based on testing/qa and best overall results.
Of course there will be issues along the way.

I had tons of issues in the beginning where i applied various slider settings along the way. Some worked very well.
The latest settings (post patch) mhave produced realistic results - the may work for Heisman.

This is pretty close to what I'm using except I have all penalties at 60 and I've increased the CPU RB Ability to 60 and the CPU Run Blocking to 90. I've also dropped WR Catching down to 10 for both teams. I'm seeing really good results and I've played about 5 or 6 games with my sliders.
