For me, what I'm actually noticing is that if you reverse the two, you create kind of a home court advantage in the game.
What can be assumed is that if you play with the superstar difficulty, you're going to have a more difficult time scoring, getting into the paint and defending will be a little harder. Yet, for the all star difficulty, you might notice less defensive pressure and more versatility offensively, along with the ability to play better defense. Combine these two and reverse them, you'll notice that a home team with an all star ability might have a noticeable homecourt feel to it while the away team on superstar will feel the pressure of playing on the road.
Mind you, this is all speculation, and I've just recently started experimenting with this... Hopefully it'll may provide some understanding for you.
