Will they do an update in January, after the real-time transfer window has closed, updating the where players are?
For example if Van Persie moved to Tottenham, would they update it and move him?

Yes to all of the above. The update is usually out the second week of February.

They even do updated appearances. I remember last year they gave Dempsey a soup-bowl haircut after he sported the do against Mexico in February's friendly.
