I have done everything mentioned so far.

I hate the camera angles though, I won the National Championship with Liberty and High Point. I had an all coach mode dynasty in which I wont three in a row.

Exactly. That is what makes it a challenge.

Maybe you need some more house rules to limit the more effective aspects of your game?

I can't recall if Choops has a player lock option....but if so, that might work?

Were you playing with any sliders in that coach mode dynasty? If not try it Jukeman's sliders.
